Cool & Green Turtle Bean Wrap (April)

Tips and tricks:

  1. Let your kids create the wrap. They’ll take pride in their creation, and are much more likely to eat it.

  2. We encourage using organic whenever possible, our kids and their planet are worth it.

  3. Many of our wrap recipes call for Vegenaise as an ingredient in the dressings. We understand that even egg-free mayo is not a health food, but used sparingly, it helps get kids to eat more beans and greens. Try this easy cashew mayo recipe, if you’re the DIY type.

  4. Measurements are approximate. We would have listed ingredient amounts as “a scoop of this,” or a “handful of that,” but measurements are a great math learning tool, so we recommend whichever way of preparing is most fun!

Wraps Rock, Tropical Style!

An exotic wrap to save the oceans and day-dream about swimming with sea turtles.

Ingredients
2 large / 10 inch whole grain  flour tortillas 2 cups romaine lettuce (or other salad greens) chopped thin
1 cup of cooked black beans – aka Turtle Beans –  rinsed and drained
1 avocado cut into cubes or mashed
1 cup chopped tropical fruit (mango, pineapple, kiwi, and/or papaya)
1/4 corn kernels (optional)
1/4 cup pepitas (pumpkin seeds)

Dressing
Mix 1 Tablespoon Vegenaise or cashew mayo  w  1 Tablespoon lime or orange juice (or combo) and 1 Tablespoon maple syrup.

Preparation
In saucepan, warm tortilla over medium-low heat to soften. Meanwhile, in a large bowl, toss remaining ingredients. Wrap up inside tortilla and enjoy!


Good Nutrition News for APRIL 

Here’s a sample of the nutrition knowledge your student is gaining this month, with  The Daily Scoop – good nutrition news delivered daily!

  • Our fruit Harvest of the Month is a little green fruit with fuzzy brown skin that kind of looks like an egg – a kiwifruit. Kiwis grow on a vine and of all the fruits, kiwifruits are one of the most nutritious!

  • India loves lentils. Brazil loves black beans. And America loves Navy beans!  All around the planet, people love beans. They’re a great protein choice for Earth Day because they use far less energy and water to grow than animal protein.  Beans are the lean and green protein.  Cool Beans!

  • This month’s vegetable Harvest of the Month is spinach, which has lots of vitamin K, to help wounds to stop bleeding, and help the healing process to begin. Vitamin K is known as the “band-aid” vitamin.
